I can’t believe it is summer already. Talk about a crazy few months. Here in the Algarve in Portugal the temperature is now well into the 30’s and we are also having the odd 40’s day. This means that it is way too hot to cook with the oven all the time and all our favourite summer recipes are coming out.
Gone is our stews and they have been replaced with salads, fajitas and lots of barbeque sauce.
Here in Portugal our life revolves around days out to the beach, to the park, lots of long family walks and a few barbeques at home too. I love summer and its great to get into the summer food and enjoy what summer recipes have to offer you.

Nothing beats paella and in my opinion it is the best part of the barbeque. I remember happy family holidays to Spain where the big paella dish would be on the go in the background. It has a lovely smell and a great way to keep all the family happy.
Many of my friends have it as a side dish, but with it satisfying most people it can take peoples attention away from the sausages and burgers!!!!
With me mentioning burgers it reminded me of my favourite turkey burgers recipe. People often complain that turkey is such a dry meat well sometimes that can be a great advantage in your cooking experience.
With burgers (especially with pork ones) then can be really runny and then end up needing a lot of bread to make them useable. Yet if you use turkey as the source of meat in your burgers you can do so without any bread and make them a really healthy alternative to pork or beef burgers.
What can I say about barbeque sauce? It is delicious and makes boring food taste amazing. In the summer it is impossible to go more than a week without it on your food and by marinating your meat in barbeque sauce you can really impress guests that come to your family get together.
In this recipe it is totally Syn Free meaning that you can have it as much as you like without having to worry about your Syn count.
Use it for your chicken breast, have it on your ribs or even have it as a dipping sauce for your burgers.
I know I can hear you shouting it at me now. Stir fry’s are too easy and why are they on your countdown?
Because even though Stir Fry’s are incredibly easy to make they are also really healthy and good for you. Plus when you want to spend limited time in the kitchen they are just perfect.
We have a stir fry as often as we can and probably have one every couple of weeks.
Well here you actually have twenty recipes in one. I love takeaways (just as much in summer as I do in winter) and in this collection they mainly suit a summer focus. My all time favourite from this list is my alternative to McDonalds and to KFC. Now they are fantastic and well worth trying out yourself at home.
But when you look at how many calories there is in a burger from a fast food establishment compared to what you could achieve, then you could have yourself an amazing meal and not feel guilty about it.
