As a former chef I used to come into contact with chicken every day of my working life. Well I say that – but I have now worked longer as a blogger than I did a chef!!!!
We could use it for several different dishes each day. It is one of the most versatile meats any chef could use. Apart from the threat of salmonella (which is a bad point) the chicken is a fantastic meat.
Plus how often do you see nutritionists mentioning chicken and vegetables as a meal for weight loss and for good healthy eating?
Chicken is full of protein and when you are on a diet or trying to eat healthy it is great for keeping you full for a longer period of time than say some beef or pork. This is because the protein in the chicken fills you up and is a slow release food.
We watched a diet show a few years ago and they did a fantastic experiment. They had lots of office workers receive free chicken sandwiches and then tested who was fullest for longer. One lot had extra bread (for the carbs) another had extra mayonnaise (for the fat) and the third had extra chicken. And it was proved that those with extra chicken picked less and were full for a much longer time period.
We love chicken and have it in various different ways.
One of our favourites is Chicken Kiev’s, you can find the recipe here, they are great and low calorie and do not take long to cook.
Another good one is coconut chicken done in the slow cooker – you can just add some green vegetables such as asparagus and broccoli, lots of onions and garlic and your done! What we like about coconut chicken is you can prepare it and then just leave it to simmer and the chicken comes out really tender and full of flavour.
So as you can see there is a theme to our chicken recipes….Anything that is easy to cook and that includes fat burning foods as losing weight is always good too!!!
Chicken does not just have to be served hot we love it in summer served in several different salads. We like chicken and sweetcorn salad. Not to mention some marinated chicken on the BBQ.
In most of our recipes we use the breast part of the chicken but I love the drumsticks. I could eat them for every meal and not complain!
Whether it is spring, summer, autumn or winter there is always a place for chicken. You could eat chicken twice a day; cook it a different way each time, then never get bored of it. Whenever we have the slow cooker on, Kyle will run through the door when he comes home from school to see how it is on offer!
