Cauliflower has got a pretty bad reputation; I know it did have when I was a professional chef! Personally I love it and when I was an obese over eater the only way I used to eat it was covered in a delicious cheese sauce.
And let’s face it cauliflower cheese is one of those dishes that is on most people’s “naughty but tasty list” along with the broccoli gratin. It was and still is one of my favourite meals but of course now I only have it in small quantities and not very often.
The reason for the reputation is because it used to be boiled to death and so it looked horrible and tasted not too good. Nothing when overcooked tastes nice but just the smell from an overcooked cauliflower can turn you off the food.
The only way for cauliflower to taste any good was if you bought organic and spent a fortune on what is known as a rather cheap vegetable. Now we have food steamers and since we started using them we have cauliflower a lot more because it simply does not cook it to the death and the taste is amazing.
Until we bought our first food steamer a few years ago (this is now on its last legs and in need of a replacement) we never realised how good vegetables could taste and how when things are boiled they can completely lose their taste and reminds us all of bland boring food.
It also goes great with broccoli and is full of goodness and we usually have it with some chicken or fish (usually salmon). And nearly all the time it is cooked in the steamer – hence the need for a new one!
We did find a brilliant way to use cauliflower and we got the idea from Jamie Oliver from one of his cooking shows.
It is cauliflower rice, yes you read that correctly. You basically get a full cauliflower and stick it in a blender and mash it up into little pieces. It then looks like simple grains of white rice (even though it isn’t).
We had it like you would imagine of proper rice and because I only eat rice if it is in a pudding then this was a good alternative way for me to have it for a main course. Also if you are following a diet where you are cutting back on carbs this is a fantastic alternative and you can serve it with some chicken curry.
Cauliflower Cheese For Healthy People
If you do want to enjoy the health benefits of cauliflower but you don’t want to steam it and then serve, then I suggest a lower calorie version of cauliflower cheese. Instead of making a cheese sauce create one with Light Philadelphia, skimmed milk and some reduced fat cheddar cheese – it tastes amazing and it is also much quicker to prepare!
This if anything should give cauliflower the new lease of life it deserves and for us when the hot weather has calmed down a bit we will be regularly having it instead of rice with our main meals and it is low in calories.
