I remember when you only ever saw a sardine in a tin but we have come a long way and the best way to enjoy a sardines recipe is to put on the barbeque! This is not of course a mandatory part of this sardines recipe but cooking the sardines on the barbeque really adds an extra dimension to the recipe while cooking outside also means that you do not have the smell off fish in your kitchen which is also a bonus.
If you do not want to barbeque then you can grill the sardine in the oven instead but you will need to adjust the cooking times accordingly.
Sardines can vary massively in size so the calorie content in this recipe is relating to an average sardine of about 75 grams each which is a smaller sized sardine.
When you buy your sardines ask your local fishmonger to gut the sardines and prepare them to eat immediately – they do not usually fillet thee tiny fish though so be prepared to put in a little work when you have cooked them to remove the bones but this adds to the entire feel of a relaxed barbeque meal with family and friends.

- 12 sardines (about 75g grams each)
- Handful of sea salt
- 1 tbsp olive oil
- Handful fresh parsley
- 2 fresh lemons
- Place the sardines into a large dish and cover with the oil and the salt
- Rub the oil and salt into the sardines until they are all covered well
- Chop up the fresh parsley and rub this in
- Heat up the barbeque and cook each sardine for between 5 and 10 minutes
- Remove the sardines from the grill and serve between four with half a lemon for each person
